Roasted Carrots with Walnut Gremolata

These simple ghee-roasted carrots are the perfect accompaniment to almost any dish on your dinner table this summer. This recipe is built around beautiful heirloom carrots, which provide a great flavour and higher nutrient content than their conventionally grown alternative. With the brightness of the orange juice and the healthy fats from the ghee and walnuts, these carrots will make you come back for seconds every time!

Cook time: 30 minutes

Serve 4

Ingredients

  • 1.5 pounds of heirloom carrots

  • 2.5 tablespoons ghee, butter or olive oil

  • 1/3 cup walnuts, finely chopped

  • 1/3 cup parsley, finely chopped

  • 2 tablespoons orange juice, freshly squeezed

  • Sea salt and pepper, to taste

Instructions

1.     Preheat the oven to 400°F.

2.     Place carrots on a baking sheet with 1 tbsp ghee/butter/olive oil, salt and pepper, toss to combine. Line the carrots in a single layer and place in the oven for 20 minutes.

3.     In the meantime, heat a pan over medium heat and add the chopped walnuts. Cook, stirring occasionally for 5 minutes. Remove from heat and allow to cool.

4.     In a small bowl, combine the 1.5 tbsp melted ghee, orange juice, parsley and walnuts.

5.     After 20 minutes in the oven, stir the carrots and return to the oven for an additional 10 minutes or until fork-tender.

6.     Remove the carrots from the oven and top with parsley and walnut mixture and serve immediately.
