Fish Tacos

I’m usually a beef taco kinda girl, but these are delish and simple!

Prep time: 25 minutes

Cook time: 15 minutes

The Fish

  • 1 large fillet of salmon (or any fish, really)

  • 1 tsp lime zest

  • Juice of 1/2 lime to serve

  • Spices: cumin, chilli, paprika, coriander, salt and pepper

Steps: Heat a large cast-iron pan over medium-high heat, and add a couple of tsp of ghee or oil. Place the fillet skin-side down and add the lime and spices! Lower the heat and cover with a lid when the edges start to cook through. Cook until the fish reaches the desired doneness (this really depends on the size of the fish). Serve with salsa, guacamole, tortillas and anything else ya want! 

The Salsa

  • 1 mango

  • 1/2 shallot 

  • 1/2 jalapeno

  • Juice of 1 lime

  • 1/2 red pepper

  • 1/4 cup chopped cilantro

  • Salt and pepper

Steps: cut everything up small and mix it together (if you make it in advance, the flavour is fab)

The Guacamole

  • 2 avocados 

  • Juice of 1.5 lime 

  • 1 Roma tomato

  • 1/2 shallot

  • 1/3 cup chopped cilantro

  • 1/2 jalapeno

  • Salt and pepper

Steps: cut everything up small and mix it together
