Peach and Blackberry Galette

This gluten and grain-free galette is seriously delicious and so easy to make! You have to try it!

Serves 6 people!

Ingredients

  • 1 1/2 cups almond flour

  • 1/4 cup + 1 tablespoon arrowroot starch, divided

  • 4 tablespoons coconut sugar, divided

  • 1/4 cup ghee

  • 1 egg

  • 1/4 teaspoon cinnamon

  • pinch of salt

  • 3 peaches, sliced

  • 3/4 cup blackberries

  • 1 teaspoon lemon juice

Instructions

  1. Make the dough: mix almond flour, 1/4 cup arrowroot starch, 2 tbsp coconut sugar, ghee, egg, cinnamon and salt in a bowl. Wrap in cling wrap or place in a container, then refrigerate for at least 1 hour.

  2. Preheat oven to 350°F

  3. In a bowl, combine the peaches, blackberries, 1 tbsp arrowroot starch, 2 tbsp coconut sugar and lemon juice.

  4. On a lined baking sheet, roll out the chilled dough till it is approximately. 10-12inches wide. Place the filling in the middle, leaving a 2-inch gap around the edges.

  5. Gently fold over the edges to make that classic galette shape. Then you can sprinkle additional coconut sugar on the crust if you want!

  6. Bake for 40-45 minutes until the crust is golden and firm to the touch. Remove from the oven and allow to cool for at least 15-20 minutes before serving.
