Peanut Sauce with Rice Paper Rolls
Let’s be honest, we’re all just here for the sauce, and I have to say, crunchy peanut butter is KEY! You can also serve this sauce with noodles, crispy tofu, and stir-fried veggies.
Crunchy Peanut Sauce Ingredients
1/3 cup crunchy peanut butter
juice of half a lime
1 tablespoon tamari or coconut aminos
1 teaspoon maple syrup
1 teaspoon sesame oil
Water (amount depends on desired consistency)
Optional: hot sauce and freshly grated ginger
Sauce Instructions: combine the peanut butter, lime, tamari, maple syrup, sesame oil (and ginger/hot sauce if using). Add water 1 tbsp at a time until the desired consistency is reached!
This recipe is for 6 to 8 rice paper rolls. To make them, you will need:
2 medium-sized carrots, cut into matchsticks
2 mini cucumbers (or one small cucumber), thinly sliced
1 pepper, thinly sliced
1/2 cup thinly sliced cabbage
1 avocado, thinly sliced
1/2 block of extra-firm tofu, cut into thin strips
1/4 cup chopped cilantro
1/4 cup chopped mint
8 spring roll wrappers
To make the rolls: follow the instructions on the packaging, divide your ingredients beforehand so each one gets enough of the fillings!
