Almond Butter Granola
Ingredients
1/4 cup coconut oil, melted
1/4 cup almond butter (or any other nut/seed butter; tahini is also very, very good in this recipe)
1/4 cup maple syrup
1 tsp vanilla extract
2 1/2 cups rolled oats
1 cup almonds, chopped or sliced
1/2 cup coconut flakes
1/2 cup pumpkin seeds
3 tbsp chia seeds
1/2 tsp cinnamon
Pinch of salt
Instructions
Preheat oven to 350°F and line a baking sheet with parchment paper.
In a large bowl, combine the coconut oil, almond butter, maple syrup and vanilla extract.
Next, add the rolled oats, almonds, coconut flakes, pumpkin seeds, chia seeds, cinnamon, salt, and stir to combine.
Spread out on the baking sheet and bake in the oven for 20-25 minutes, stirring halfway through and remove when the edges are golden.
Note: this recipe is very forgiving! You can really replace any of the ingredients with what you have on hand or prefer, as long as you keep the ratio of wet to dry ingredients.
