Chickpea Pancakes
My new obsession and favourite savoury breakfast! And this recipe is quick!
Ingredients
1/2 cup chickpea flour
1/2 water
1 tbsp olive oil
1 grated zucchini
1 green onion, thinly sliced
zest of 1 lime or lemon
chopped cilantro, parsley, mint (whatever you have on hand)
Garnish: herbs, avocado, green onion, lime/lemon, black sesame seeds
Instructions
Whisk chickpea flour, water and olive oil
Stir in the other ingredients (you want to cook this immediately, so the batter doesn’t absorb too much liquid from the zucchini
Heat olive oil on a non-stick/cast-iron pan
Pour approx. 1/4 cup of the batter into the pan at a time (makes 8 pancakes)
Be patient before flipping so they get crispy, but they cook quickly!
Serve with whatever toppings you want!
