Chocolate Chip Peanut “Butter Perfect” Bars

Our protein/granola bars SHOULD live in the fridge, not on the shelves for months and SHOULD have real ingredients! So this is my recipe for homemade vegan “Perfect Bars”, and they tasted just as good, if I do say so myself. 

Ingredients

  • 1/2 cup creamy peanut butter

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup

  • 2 tbsp melted coconut oil

  • pinch of salt

  • 1/4 cup almond flour

  • approx 6 tbsp coconut flour

  • 2 tbsp collagen peptides

  • Mix-ins: chocolate chips, chopped peanuts

Instructions

  1. Mix peanut butter, vanilla extract, maple syrup, and melted coconut oil

  2. Stir in 1/4 cup almond flour, collagen peptides and salt

  3. Stir in coconut flour 1 tbsp at a time (you may use more or less flour)

  4. Add your mix-ins!

  5. Divide into 12 bars, freeze for 20mins and store in the fridge.
