Cinnamon Apple Pancakes

Very fun, very fall. Tasty pancakes that go great with bacon and candied pecans for brunch.

Yield: 12 pancakes

Ingredients

  • 1.5 cup rolled oats

  • 1 egg

  • 1 cup plant-based milk

  • 1 tablespoon melted ghee or coconut oil

  • 1 teaspoon baking powder

  • 1 teaspoon vanilla

  • 1 teaspoon cinnamon

  • 1/4 teaspoon nutmeg

  • Pinch of salt

  • 1 apple (finely chopped or grated)

Instructions

  1. In a blender, blend the oats until they become a fine flour (approx. 30 seconds).

  2. To the blender, add the egg, milk, ghee, baking powder, vanilla, cinnamon, nutmeg, and salt. Blend again until thoroughly combined. Stir in the apple.

  3. Heat a large nonstick skillet over medium heat. Once hot, spoon 1/4 cup of the batter onto the skillet. Cook until bubbles appear on the pancake and the edges dry. Flip the pancakes and cook through. Repeat with the remaining batter.

  4. Serve immediately with almond butter, maple syrup, candied pecans, sliced apple and cinnamon.
