Bolognese

I had been craving this for weeks! We usually get bolognese takeout (from Terroni in Toronto), but alas here I was having to make it myself. Have to say, turned out pretty good. Everyone at the table (there were only 3 of us) had seconds.

Ingredients

  • 1 tablespoon olive oil

  • 1 small red onion, diced

  • 1 clove of garlic, minced

  • 500 grams grass-fed ground beef

  • 1 medium sized carrot, grated

  • 750ml strained or crushed tomatoes

  • 1 teaspoon dried thyme

  • 1 teaspoon dried oregano

  • 1 teaspoon dried basil

  • pinch of red chili flakes

  • Salt and pepper, to taste

  • Fresh basil, to garnish

Instructions

  1. In a large saucepan, heat olive oil. Add the onion to the pan and cook until translucent and fragrant, a couple of minutes.

  2. Add garlic and ground beef to the pan. Breaking up the meat with the back of your spoon and cooking until evenly browned and no pink remains, about 5-8 minutes. Season with salt and pepper.

  3. Add the grated carrot and tomatoes to the pan.

  4. Bring the sauce to a boil, then add the thyme, oregano, basil and chilli flakes. Lower the heat to a simmer and cover.

  5. Cook the sauce for 15 minutes (and up to an hour if you would like), adding more liquid (either water or bone broth as needed).

  6. When ready to serve, garnish with basil and season with salt and pepper.

  7. Serve with your favourite pasta!
