Spring Vegetable Pasta
Serves 4
Ingredients
1 box of pasta
2 tbsp ghee, divided
2 zucchini, cut into chunks
2 cups kale, finely sliced
1 cup fresh peas
1/2 fresh herbs (i.e. basil, parsley)
juice of half a lemon
2 tbsp nutritional yeast
Salt and pepper, to taste
Instructions
Cook pasta in salt water according to the instructions on the box, saving some of the pasta water.
In the meantime, heat 1 tbsp of ghee in a large frying pan and add the zucchini, kale and peas and cook for about 5 minutes.
To the frying pan, add the remaining 1 tbsp of ghee, herbs, lemon juice, nutritional yeast, and cooked pasta. Season with salt and pepper, add pasta water 1 tbsp at a time until the desired sauce consistency is reached and serve!
