Spring Vegetable Pasta

Serves 4

Ingredients

  • 1 box of pasta

  • 2 tbsp ghee, divided

  • 2 zucchini, cut into chunks

  • 2 cups kale, finely sliced

  • 1 cup fresh peas

  • 1/2 fresh herbs (i.e. basil, parsley)

  • juice of half a lemon

  • 2 tbsp nutritional yeast

  • Salt and pepper, to taste

Instructions

  1. Cook pasta in salt water according to the instructions on the box, saving some of the pasta water.

  2. In the meantime, heat 1 tbsp of ghee in a large frying pan and add the zucchini, kale and peas and cook for about 5 minutes.

  3. To the frying pan, add the remaining 1 tbsp of ghee, herbs, lemon juice, nutritional yeast, and cooked pasta. Season with salt and pepper, add pasta water 1 tbsp at a time until the desired sauce consistency is reached and serve!
