Vegan Cabbage Soup

This is my winter go-to soup recipe (because winter isn’t over in Canada yet) and an ode to my Eastern European roots.

Ingredients

  • 1 onion, finely chopped

  • 1 tbsp of ginger, minced

  • 1 tbsp each of thyme, oregano, paprika and turmeric (you can add later if you want more flavour)

  • 1/2 large green cabbage, shredded/finely julienned

  • 1 large sweet potato, finely cubed (1 cm)

  • 1/2 cup lentils (pre-soaked and thoroughly washed)

  • 1 can of diced tomato approx. 28 fl oz (i recommend fire-roasted)

  • 1 litre of vegetable stock

  • 1 large bunch of kale

  • salt and pepper to taste

Instructions

  1. Heat a large saucepan on the stove, add in oil

  2. Cook onion and ginger in pan until translucent and fragrant; then add the spices

  3. Add the cabbage, sweet potato and lentils and stir together

  4. Add canned tomatoes and stock, cook for approx. 25-30 minutes until sweet potato is tender and lentils are cooked through

  5. Stir in kale, season with salt and pepper to taste and SERVE
