Vegan Cabbage Soup
This is my winter go-to soup recipe (because winter isn’t over in Canada yet) and an ode to my Eastern European roots.
Ingredients
1 onion, finely chopped
1 tbsp of ginger, minced
1 tbsp each of thyme, oregano, paprika and turmeric (you can add later if you want more flavour)
1/2 large green cabbage, shredded/finely julienned
1 large sweet potato, finely cubed (1 cm)
1/2 cup lentils (pre-soaked and thoroughly washed)
1 can of diced tomato approx. 28 fl oz (i recommend fire-roasted)
1 litre of vegetable stock
1 large bunch of kale
salt and pepper to taste
Instructions
Heat a large saucepan on the stove, add in oil
Cook onion and ginger in pan until translucent and fragrant; then add the spices
Add the cabbage, sweet potato and lentils and stir together
Add canned tomatoes and stock, cook for approx. 25-30 minutes until sweet potato is tender and lentils are cooked through
Stir in kale, season with salt and pepper to taste and SERVE
