Ultimate Pantry Cookies

These are my go-to quarantine cookies featuring just about every ingredient in my pantry! This is a “throw everything in the bowl and mix” kind of recipe, which is my favourite kind! So easy and delicious! This recipe is HIGHLY customizable, so switch up the ingredients to use what you have on hand and enjoy it most! Plus, this can either be a cookie or a raw protein ball (omit the baking soda)! Whatever floats your boat, the options are endless!

Yield: 12-16 cookies

Prep time: 10 minutes

Cook time: 15 minutes

Ingredients

  • 1/2 cup almond butter (or any nut butter)

  • 1/4 cup maple syrup (or any liquid sweetener)

  • 1 tbsp melted coconut oil (or any liquid oil)

  • 1 tsp vanilla

  • 1 cup oats

  • 1/2 cup hemp seeds

  • 1/4 cup sunflower or pumpkin seeds

  • 1/4 cup almond flour

  • 1/4 cup coconut flakes

  • 1 tbsp chia seeds

  • 2 tbsp ground flax

  • 1 tbsp adaptogen of your choice (i.e. maca or ashwagandha)

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1/2 tsp baking powder

  • Mix-ins of your choice (chocolate chips, chopped dates, etc.)

Instructions

  • Preheat oven to 350F (or mould into protein balls and store in the fridge)

  • Divide into 12-16 cookies and bake for 12-15 minutes

  • Let cool for 5 minutes and enjoy!
