Creamy Vegan Avocado Pesto

Nothing says spring to me more than pesto pasta! Here is my recipe for creamy vegan pesto!

Ingredients

  • 1/2 avocado

  • 1 bunch of basil

  • handful of spinach

  • 1/3 cup cashews

  • 2 tbsp olive oil

  • juice of 1 lemon

  • 1 garlic clove

  • 1 tbsp nutritional yeast

  • salt/pepper to taste

  • water as needed

Instructions? Just blend the ingredients in a high-power blender/food processor, adding water slowly until you reach the desired consistency. Add to EVERYTHING
