Chocolate Chip Banana Bread

Ingredients

  • 1/3 cup olive oil

  • 1/2 cup maple syrup

  • 2 eggs

  • 1 cup of mashed ripe banana (about 2-3 bananas)

  • 1/4 cup plant-based milk

  • 1 tsp vanilla extra/paste

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp cinnamon, plus more to sprinkle on top

  • 1 3/4 cup of GF flour (I recommend Bob’s Red Mills GF 1-to-1 baking flour)

  • Optional mix-ins: 1/2 cup chocolate chips, pecans, walnuts

Instructions

  1. Preheat oven to 325 degrees F

  2. Line a 9x5-inch loaf pan with parchment paper

  3. In a small bowl, mix flax egg, let sit for 5 minutes

  4. In a large bowl, whisk avocado oil and maple syrup. Add flax egg and whisk again, then add milk and mashed banana

  5. Whisk in baking soda, vanilla, salt and cinnamon, then gently fold in flour and mix-ins (chocolate chips, nuts, etc.)

  6. Pour batter into a loaf pan and sprinkle additional chocolate chips, nuts and cinnamon on top of the loaf

  7. Cook for approximately 60 minutes, then let the bread cool for 10 minutes in the pan before removing to cool completely on a wire rack. Eat while warm!
