Chocolate Chip Cookie Dough Bars

Since going gluten-free, I’m such a raw dessert person. My cookie dough rarely turns into cookies anymore, so I decided to make it into a recipe!

Ingredients

  • 1/2 cup (heaping) of cashew butter

  • 1/4 cup of coconut oil (melted)

  • 1/4 cup of maple syrup

  • 1 tsp of vanilla bean paste

  • 2 1/2 cups of almond flour

  • 1/2 tsp sea salt

  • 1/2 cup (or more) chocolate chips

Instructions

  1. Mix all wet ingredients in a bowl until incorporated

  2. Mix in the remaining ingredients, placing the mixture in a lined 8x8ā€ baking dish

  3. Place cookie dough in the freezer for one hour

  4. Cut into 25 (ish) square and EAT! or dip in melted chocolate and sprinkle with flaky sea salt

  5. Store in the freezer, but let warm-up for 5 minutes before eating :)
