Paleo Peanut Butter Cookies

Peanut butter cookies are delicious. Need I say more?

Ingredients

  • 1 cup peanut butter (I recommend using a crunchy variety)

  • 1 egg

  • 1 teaspoon vanilla bean paste

  • 1/3 cup coconut sugar

  • 1/3 cup almond flour

  • 1/2 teaspoon sea salt

  • Optional: 1/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.

  2. In a mixing bowl, combine the peanut butter, egg and vanilla bean paste.

  3. Then add the coconut sugar, almond flour, sea salt and chocolate chips (if using) and mix until combined.

  4. Divide into 12 equal-sized balls of dough and press down lightly onto the baking sheet, leaving 1-inch of space between cookies.

  5. Bake for 12 minutes until edges are lightly golden brown. Do not overbake; they will seem too soft at first but allow them to sit on the baking sheet for 10 minutes before moving or eating.
